With over 17 years of culinary expertise, Chef Eddie has served numerous politicians and dignitaries such as Prime Minister Lee Hsien Loong, Former President Tony Tan, and the late President S.R. Nathan and late Minister Mentor Lee Kuan Yew.
His love for food spurs him to continuously learn and explore his craft, resulting in an impressive career which includes working for reputable hotels such as Marina Mandarin Hotel and Ritz Carlton Millenia Singapore. His list of accolades includes clinching several gold medals at gourmet challenges held by Food and Hotel Asia as well as serving over 1000 guests present at the first ever Formula One night race held in Singapore!
With his forte in fusion molecular culinary, Chef Eddie is a magician when it comes to fine dining cuisines and plating. Keen at playing with Asian flavours and spices, he transforms the simplest of ingredients; swirling together playful combinations onto plates – perfectly creating cuisines with refreshing Asian inflections using western techniques.
